Sweetcorn & Sun-dried Tomato Breakfast Waffles with a Boiled Egg, Avocado & Roasted Balsamic Glazed Cherry TomatoesA really easy gluten & dairy free recipe to make at home this weekend! I was so excited to try out my new waffle maker which I brought from Amazon, it is the: Savisto Rotary Waffle Maker | 180° Rotating Belgian Waffle Iron with Non Stick Cooking Plates.
INGREDIENTS
For Waffles:
100g gluten free flour I used Buckwheat (But you can use any gluten free flour mix, quinoa etc).
1tsp baking powder
1 tsp paprika
1 Tablespoon of Linewoods Milled Flaxseed with Biocultures & Vitamin D (for extra nutrients)
Sprinkle of salt & pepper
1 Egg (I used St Ewe Rich Yolk)
150ml dairy free milk (I used Marks & Spencer Almond Milk)
200g can/jar sweetcorn
Handful of coriander, chopped spring onions & sun dried tomatoes
1/2 Avocado
6 Cherry tomatoes (drizzle of balsamic glaze)
Micro coriander
METHOD
1️⃣ Sift the flour into a large mixing bowl, add the baking powder, paprika, Pinewoods mix & seasoning.
Make a well in the middle, add in the beaten egg & slowly pour in the milk until all combined into a smooth batter.
2️⃣ Add in the sweetcorn, finely copped sun-dried tomatoes, coriander, spring onion & mix well.
3️⃣ While you are making this batter you can heat the waffle maker as per instructions. After turning mine on & setting it to a medium temperature, I added in a tablespoon of coconut oil so it was covered on both the top and bottom tray. Once hot pour in the mix evenly, I cooked mine for 4 minutes then turned 180• and kept rotating for about 20 minutes until cooked/ gone golden. I think if you turn the heat up more it would be quicker I was just worried it may burn so takes a few goes to figure out.
4️⃣ Whilst this is cooking I prepped the avocado with a squeeze of lemon juice & you can either bake the cherry tomatoes in the oven with a balsamic glaze covering or pan fry.
5️⃣ When the waffle were nearly done I cooked the soft boiled egg for 5 1/2 minutes in boiling water on a medium/high heat and then placed under cold water & peel off the shell then simply cut in half.
That is it 🙂 and the verdict on my new waffle machine 10/10!
